I was showering and thinking about Christmas and for some reason I thought about these:
In our christmas stocking my mom always put oranges in the bottom of them and a few years, we got these instead of oranges, so yummy!
Anyway, I bought dark chocolate chips a few weeks ago and I would google a chocolate orange muffin recipe and found a bunch. A lot of them used ingredients that i didnt have but I finally found a really easy recipe. It called for buttermilk which I didnt have so I googled "buttermilk substitute" and found out that you can add lemon juice to milk and let it sit for a few minutes instead of using buttermilk.... gotta love google!
Here is the recipe:
1 stick butter
2 eggs
1 c. sugar
2 c. flour
Fresh grated peel of 1 orange (1 1/2 tsp. to 1 tbsp.)
1 c. buttermilk
1/2 tsp. baking soda
1 tsp. baking powder
1 c. miniature chocolate chips

Beat butter and sugar until creamed. Beat in eggs. Add grated orange peel. In separate bowl, combine buttermilk and baking soda and powder. (Don't worry it if curdles.) Squeeze the juice from the orange (6 to 8 tablespoons) into buttermilk. Add buttermilk and flour alternately 1/3 at a time into butter mixture. Fold until just combined. Fold in chocolate chips. (Don't overmix.) Spoon into muffin pan. Bake at 375 degrees until golden brown, about 20 minutes.
I have really dark muffin pans that I have been burning the bottoms of all my muffins pretty so I turned down the over to 350 and cooked them for 17 min and they turned out pretty fantastic!
Of course, all these yummy treats are not what Brandon and I need to be eating all the time (neither is the Burger King we had for dinner HAHA...) So I sent s'more brownies with him last week to bring to work and Im sending him with most of the muffins to bring to work tomorrow. So hopefully him and I don't end up looking like this...
Anyway, just thought I would share this yummy recipe!!

ReplyDeleteAngela i love you! That's so funny, my parents did the same thing. They put regular oranges in our stockings and then changed to the chocolate oranges. Looks like great minds think alike!
